Breakfast Casserole

Breakfast CasseroleOur family loves breakfast for dinner and this is the perfect recipe for it. This casserole is a make ahead recipe. So make it the night before and you have an easy breakfast or dinner meal. Add vegetables to the casserole and serve with some fresh fruit for a complete meal.

Ingredients:

  • 9 eggs
  • 3 cups of whole milk
  • 8 oz cooked ham (cubed) or cooked sausage (crumbled)
  • 8 oz cheddar cheese, shredded
  • 6 slices of bread, cubed with crusts (about 4 cups)
  • 1 tsp dried ground mustard
  • 1 tsp salt

Directions:

  1. Butter a 9" x 13" baking dish.
  2. Spread the cubed bread evenly in the baking dish.
  3. Sprinkle ham over top of bread.
  4. In a large bowl, whisk eggs just until blended. Add milk, dried ground mustard and salt. Mix until well combined.
  5. Pour egg mixture over top of ham and bread cubes in baking dish.
  6. Sprinkle shredded cheese over top. Cover and refrigerate overnight or at least 4 hours.
  7. Preheat oven to 350 degrees. Remove casserole from refrigerator, uncover and bake for 45 - 60 minutes. Bake until puffed up slightly and center is set.
  8. Let rest 5 minutes before serving.

Comments:

- If the ham is pretty salty, reduce the amount of salt added.

- You can use any type of cooked ham such as Black Forest ham from your deli, sliced in a single thick slice.

- French bread can be substituted in this recipe.

- Such a versatile recipe that you can use any combination of meat and cheese as desired. See below for just some variations.

Variations:

- Mild Italian sausage or turkey sausage.

- Cubed ham and Swiss cheese.

- Crumbled cooked bacon and sharp cheddar cheese. 

- Add vegetables such as chopped tomatoes, blanched asparagus or broccoli,  caramelized onions, green onions, sautéed mushrooms, roasted red peppers, etc.
