Mexican Lasagna

1This recipe is so easy and so good! It is also great for making ahead and reheating. I like to cut up the leftovers into squares, wrap up and freeze individually for lunches.

Ingredients:

  • 1 1lb ground beef, ground turkey, or ground chicken
  • 2 (8 oz) cans tomato sauce
  • 1 (15.5 oz) can black beans, rinsed and drained
  • 1 cup white or yellow corn, frozen or canned
  • 1 medium onion, chopped finely (about 1 cup chopped)
    1 (4 oz) can chopped green chilies, undrained
  • 3 med-large garlic cloves, minced
  • 1 tbs olive oil
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp dried oregano
  • 1/4 tsp crushed red pepper flakes

  • 2 cups cheddar cheese, shredded
  • 6 flour tortillas - 8" size

Directions:

  1. Preheat oven to 350 degrees. Lightly grease or spray with cooking spray a  9" x 13" baking dish.
  2. Heat olive oil in a large skillet on medium high heat. Add ground meat until lightly browned breaking up into small pieces as it cooks. Drain fat in colander, returning meat to skillet.
  3. Add onion and garlic to skillet and continue to cook for another 2 minutes or until the onion becomes tender.
  4. Add chili powder, cumin, oregano and chili flakes combining well with the meat mixture.
  5. Add tomato sauce, black beans and corn to meat mixture in skillet. Combine well and continue to cook another 5 minutes.
  6. Layer 1 - Place 1/3 of the meat mixture in the greased baking dish. Top with 3 tortilla shells. Overlap the tortilla shells as necessary.
  7. Layer 2 - Place 1/3 of the meat mixture on top of the top of the tortilla shells. Sprinkle with 1/2 of the cheddar cheese. Top with 3 tortilla shells.
  8. Layer 3 - Place the final 1/3 of the meat mixture on top of the top of the tortilla shells. Sprinkle with the last of the 1/2 of the cheddar cheese.
  9. Bake uncovered for 15 minutes.
  10. Allow the casserole to sit for 5 minutes before serving.
  11. Slice into squares topped with a dallop of sour cream, sliced black olives, and some chopped green onion if desired. Like it spicey? Add sliced fresh or pickeled jalapenos.

Variations:

- Replace meat with 1 pound of cooked and shredded chicken such as breasts and or thighs.
