Rosemary Chicken and Potatoes

1This recipe is super easy to make and is great for a weeknight meal. It takes only minutes to prep and another 30 minutes or so to cook. The potatoes are loved by our entire family.

Ingredients:

  • 4 - 6 pieces of skinless chicken parts such as breasts or thighs (bone-in or boneless)
  • 10 - 12 small red potatoes, diced into small chunks
  • 2 tbs olive oil
  • 2 tsp paprika
  • 1 tsp crushed rosemary leaves
  • 1 tsp salt or kosher salt
  • 1 tsp dried minced garlic, or 3 garlic cloves, minced
  • 1/2 tsp black pepper, freshly ground

Directions:

  1. Preheat oven to 425 degrees.
  2. In a large bowl, combine oil and herbs/spices.
  3. Add chicken and potatoes to bowl and coat with the oil mixture..
  4. In a single layer on a large baking sheet (15"x10"x1"), place chicken and potatoes on the baking sheet.
  5. Bake for 30 to 40 minutes or more until potatoes are tender and chicken is cooked through to 180 degrees. (If using boneless chicken breasts, cook until internal temperature is 170 degrees).

Comments:

- I love this recipe because it is so easy. Serve with a simple green vegetable such as green beans.
