Soft and Chewy Caramels

1These little bite size pieces of caramel just melt in your mouth. As the title says, "soft and chewy" with a buttery taste. Yum!

Ingredients:

  • 1 cup butter
  • 1 cup light or dark corn syrup
  • 1 lb light brown sugar
  • 1 14oz can sweetened condensed milk
  • 1 tsp vanilla extract

Directions:

  1. Except for vanilla, combine all of the ingredients in a heavy bottomed saucepan. Stir until smooth.
  2. Cook over medium heat, stirring constantly with a wooden spoon until liquid comes to a boil.  Continue to cook, stirring often until the candy reaches a temperature of 235 degrees. (Takes about 20 - 30 minutes).
  3. Continue to cook for an additional couple minutes.
  4. Remove from heat, add in vanilla and stir until no longer bubbling.
  5. Without scraping bottom of saucepan, pour into a buttered 8" x 8" pan or "13 x 9" pan.
  6. Allow to sit at room temperature for quite a few hours until completely cooled. These will be hot for a long period of time.
  7. Cut with a buttered knife into candy size pieces and wrap in waxed paper, plastic wrap or cellophane.

Comments:

- You will need to use a candy thermometer to achieve the proper temperature.

Tips:

- To test the accuracy of your candy thermometer, place it in a saucepan of boiling water and it should read 212 degrees. If it is off by a degree or two, adjust your recipe accordingly.
